Asparagus question...


Is a smaller or larger asparagus size more tender?


Answer: Both small and large spears can be tender vs. stalky. The larger spear of asparagus is a more mature asparagus and the smaller spears are younger spears sometimes only in the early stage of its years, both coming from the same crown or plant which below ground is a large network of roots that shoot up the spears from the ground. Many people like the larger spears for grilling and the smaller ones for chopping In dishes. Because we harvest only the tips of both small and the large asparagus vs cutting it long the premium tip is what you get, which is nice and tender and not stalky, meaning you get the premium tips and you are not buying the woody stalk. Also, by buying local you fresh, fresh fresh!
